I know not everyone loves kale, but I’m generous with the toppings: in this case olive oil, sautéed red onions, feta cheese, pine nuts , and lemon juice. I swapped out the quinoa for farro because I love it. Also, tip with the kale, it’s better if you chop it up into smaller pieces and sauté it a bit as in this recipe. Hiding beneath those tomatoes is a savoury mix of mostly steel cut oats and (frozen) cauliflower that took about 5-10 minutes to dump into the instant pot. I slow-roasted cherry tomatoes (swipe to see) for the super-yummy topping, but she has a number of other suggestions.
