This was our (quick) dinner and it so hit the comf This was our (quick) dinner and it so hit the comfort food sweet spot we needed tonight. From @dinnerwithjulie 👌👌. I know not everyone loves kale, but I’m generous with the toppings: in this case olive oil, sautéed red onions, feta cheese, pine nuts , and lemon juice. I swapped out the quinoa for farro because I love it. Also, tip with the kale, it’s better if you chop it up into smaller pieces and sauté it a bit as in this recipe. Raw and in big pieces it is really awful. https://www.dinnerwithjulie.com/2012/02/02/kale-quinoa-salad-cranberries-feta/
Loved this dish from the new @ohsheglows cookbook. Loved this dish from the new @ohsheglows cookbook. She’s always so innovative! Hiding beneath those tomatoes is a savoury mix of mostly steel cut oats and (frozen) cauliflower that took about 5-10 minutes to dump into the instant pot. I slow-roasted cherry tomatoes (swipe to see) for the super-yummy topping, but she has a number of other suggestions. Great satisfying weeknight meal. 👍👍 #oatsfordinner #bringiton #januarycomfortfood #hearthealthy! #sweetspotfood ❤️😋
