Recipe: Blueberry-Ricotta Swirl

Sharing another recipe this week from my new 30-Minute Heart Healthy Cookbook: Blueberry-Ricotta Swirl. It’s almost cheating to call this a recipe because it’s so simple. Just mix a little sugar with ricotta cheese, add lemon zest if you want to be fancy, and top with blueberries.

Pull this out of your hat when you want something sweet but don’t want to take more than a few minutes. I serve it in these little mason jars because they look pretty, it makes small portions look more substantial, and you can take it on the go.

If you don’t have blueberries, it’s also good with chocolate, raspberries, even pumpkin. (See variations in the recipe below.) Essentially any flavours that you like in cheesecake you can do in this with for a lighter five-minute treat.
