Recipe: Omega-3 Skillet Granola

I first saw skillet granola years ago on Julie Van Rosendaal’s brilliant blog. Like her, I was surprised and delighted to learn you can make granola in just a few minutes. Game changer!
This variation is packed with omega-3 rich nuts and seeds, so it’s higher in heart healthy fat, lower in sugar and other carbohydrates than most granolas. If you’re having it with plain yogurt you might want to drizzle in a bit more sweetener — maple syrup or honey — or add fresh or dried fruit. If you’re having it with milk or flavoured yogurt, which is always sweetened, it’ll probably be just fine as it is.
If you’re in the mood for something special but quick this weekend for breakfast, give this a try! If you don’t have exactly these nuts and seeds, substitute with what you do have on hand. It’s all good.
